Country Chicken Dum Biryani
Hello Foodies! Today we came up with one of the most requested recipes Country Chicken Biryani/Natu Kodi Biryani. The Spicy Chicken Biryani is perfect for any parties or on weekends.
In this video, I shared all the tips and the special masala for the biryani. The quantity is sufficient for 6-7.
Ingredients:
1. Country chicken - 850 gm
2. 75 ml Oil
3. Salt
4. 500 ml Water
For Masala Powder
1. 15 Dry Chilies
2. 2 tbsp Coriander
3. 1 Star Anise
4. 2 Inch Cinnamon
5. 6-7 Cloves
6. 4 Cardamom
7. 1 Mace
8. 1 tsp Cumin
9. 1 tbsp Black pepper
10. 1 bay leaf
11. ¼ cup Fresh Coconut
12. 1 tbsp Poppy Seeds
For Biryani
1. 75 ml Oil
2. 1 Star anise
3. 1 bay leaf
4. 3 Cardamom
5. 4 Cloves
6. 2 Sprigs Curry leaves
7. 250gm Onion Sliced
8. Salt
9. 2 tbsp Ginger garlic paste
10. 2 Slit green chillies
11. Ground Masala paste
12. 1 Tomatoes paste
13. ¼ cup Curd
14. ¼ cup Pudina
15. ¼ cup Coriander
16. 3 cup Basmati Rice
17. Cooked Chicken
18. 3.5 Cups Hot Water
19. ¼ cup Coriander
20. ¼ cup Pudina
21. 2 tbsp Butter
22. 2 tsp Ghee
For Raitha
1. 300gm chilled Curd
2. 1 cup Cucumber cubes(de-seeded)
3. ¼ cup carrot
4. ½ tsp
5. 1 tsp chilli
6. ¾ tsp chat masala
7. ½ tsp Lemon zest
8. Salt
Procedure:
1. Heat the oil and add the chicken & salt.
2. Fry till the chicken turns light golden
3. Add the turmeric and sauté for 2 min
4. Add 750ml water and pressure cook(bajaj cooker) on medium flame for 4 whistles
5. For masala roast all the spices on low flame and grind to a fine paste with water
6. Heat the oil and fry the whole masalas and onion to golden
7. Fry ginger garlic paste chillies.
8. Add the ground masala paste and curd combine well till oil floats
9. Add salt, 1 hour soaked basmati rice, coriander and Pudina
10. Saute gently 2 mins and add the cooked chicken along with the water
11. Add 4 cups hot water, pudina and coriander and combine well
12. Cover and dum cook for 25 min.
13. Serve hot
For Raitha:
Combine all the ingredients well & serve chill
